Chickpea 'tuna' for National Vegetarian Week

To celebrate National Vegetarian Week, we’ve teamed up with our friends at Vegan Punks to create a simple weekday lunch, perfect for summer months.
This chickpea ‘tuna’ is a simple idea for speedy lunches – it takes less than 15 minutes to make. Just make sure you have a good quality wrap or some nice crusty bread and salad to serve it with.
It's a spin on a classic tuna mayo sandwich filling – a cruelty-free, healthier option. Don’t forget to check out the video of this recipe being made below.
Serves four
For the chickpea ‘tuna’:
400g tin of chickpeas - drained and rinsed
1/2 red onion - finely chopped
3 tsp vegan mayo
1 tsp Dijon mustard
Juice of 1/2 lemon
2 tbsp sunflower seeds
½ cup sweetcorn
Salt for seasoning
Method:
1. Mash the chickpeas up in a large bowl until they're all broken up
2. Add all the other ingredients in and mix really well
3. Serve as a filling in a wrap or sandwich
4. Add some bonus ingredients such as lettuce or avocado to take it to the next level.
